3 Easy Rice Cake Recipes

Now that it’s starting to warm up, we’re always on the lookout for tasty snacks that are light on calories. One of our favorite snacks that ticks all the boxes? Rice cakes!

So we thought, apart from just eating them straight from the pack like we usually do, what could we put on them that keeps them nice and healthy but still taste like a treat? Here’s 3 of our favorite rice cake snacks.

Avocado Toast with a Twist

We’re always craving avocado toast, but this recipe from Avocado Pesto is an even easier twist on the brunch favorite.

  • Quaker Rice Cakes
  • 1/2 avocado
  • 2 soft or hard boiled eggs, peeled and thinly sliced
  • small handful alfalfa sprouts
  • 6-10 capers
  • squeeze of lime juice

 Directions

  1. Spread avocado on each rice cracker. Add salt, pepper and squeeze of lime juice.
  2. Top each rice cracker with egg, alfalfa and capers.

Fruity Face Pizzas

This one is great for kids as an after school snack. OK, big kids will love it too. Inspired by Well Plated.

  1. Spread rice cakes with peanut butter. Arrange fruit slices in a heart shape and sprinkle the ‘head’ of the face with granola.

This vegan and gluten-free snack inspired by Deliciously Organized is great for breakfast, mid-afternoon or as a coffee treat.

  1. Slice up banana. Spread rice cakes with peanut butter and top with bananas. Sprinkle with cinnamon.
