Cranberry-Cilantro Salsa with Cream Cheese Spread


Shimmering cranberry salsa tops the green onion-enhanced creame cheese layer in this festive spread.


Prep Time: 20 minutes

Total Time: 20 minutes

Servings: 28


Ingredients:

  • 1 bag (12 oz.) fresh cranberries
  • 1/3 cup sugar
  • 1 large jalepeno pepper, seeded
  • 2 tablespoons lime juice
  • 1/2 teaspoon ground ginger
  • 1/3 cup chopped fresh cilantro
  • 12 ounces cream cheese, softened
  • 1/3 cup sliced green onions
  • Keebler Club Original Crackers


Directions:

  1. In food processor, combine cranberries, sugar, jalapeno pepper, lime juice, and ginger. Cover and process until finely chopped. (No not over process). Stir in cilantro.
  2. Stir together cream cheese and onions. Spread into an 8-inch circle on serving plate. Spoon cranberry mixture onto top of cream cheese mixture. Arrnage Keebler Club Original crackers around spread. Serve immediately.

Warm Cranberry-Glazed Brie

What's Thanksgiving without baked brie? This take on tradition includes lots of warm cranberries so you can steep in the flavors of the season.


Prep Time: 15 minutes

Total Time: 25 minute

Servings: 10


Ingredients:

  • 1 round (8 oz.) Brie cheese
  • 1/2 cup whole berry cranberry sauce
  • 1/4 teaspoon grated gingerroot
  • 1/4 teaspoon grated orange peel
  • 1/8 teaspon allspice
  • 2 tablespoons chopped pistachio nuts, hazelnuts, or pecans, toasted
  • 1 teaspoon chopped fresh chives
  • 40 Keebler Toasteds Crackers

Directions:

  1. With a sharp knife, cut circle in top of rind of cheese, leaving 1/4-inch border around top of cheese. Carefully remove center circle of rind and discard. Do not cut side of rind. Place cheese in a 9-inch pie plate.
  2. In a small bowl, stir together cranberry sauce, ginggeroot, orange peel, and allspice. Spoon onto center of cheese round.
  3. Bake at 350F for 10 to 15 minutes or until cheese softens.
  4. Sprinkle with nuts and chives and serve with Keebler Toasteds.
